Pico de gallo

Pico de gallo (Spanish for "rooster's beak") is a garnish made from chopped onion, tomato, chiles (typically serranos or jalapeños), and seasonings; often other ingredients such as lime juice (lemon in Mexico), cilantro, avocado, cucumber, and radish. It can be used in much the same way as other Mexican salsas or Indian chutneys; but since it is less fluid, it can also be used more as a main ingredient in dishes such as tacos and fajitas[?]. In Mexico, Pico de Gallo is better known as Salsa Mexicana since the colors red (tomato), white (onion) and green (chile) are the colors of the Mexican flag.
