Pico de gallo (
Spanish for "rooster's beak")
is a garnish made from chopped
onion,
tomato,
chiles
(typically
serranos or
jalapeños),
and seasonings; often other ingredients such as
lime juice (
lemon in Mexico),
cilantro,
avocado,
cucumber, and
radish.
It can be used in much the same way as other
Mexican
salsas or
Indian chutneys;
but since it is less fluid, it can also be used more as a main ingredient
in dishes such as
tacos and
fajitas[?].
In Mexico, Pico de Gallo is better known as Salsa Mexicana since the colors red (
tomato), white (
onion) and green (
chile) are the colors of the Mexican flag.
