Aioli

Aioli (from Provençal language garlic and oil, SAMPA [aj'oli]) is a cold sauce made of garlic, egg and olive oil, basically a garlic-flavoured mayonnaise.

Catalan variant allioli (from Catalan garlic and oil, SAMPA [aLi'oli]) is a thick emulsion of only garlic and olive oil (no egg involved).

Different variants of this sauce exists along the Mediterranean coasts from Andalusia to Sicily.
