Sodium alginate

The chemical compound sodium alginate is the sodium salt of alginic acid[?]. It is an extract of seaweed and is used as a thickener in the food industry and as a gelling agent and emulsifier.

Its empirical chemical formula is C₆H₇NaO₆.
