Tripe is the stomach of various ruminating animals. Classified as offal[?], most tripe used for cooking is taken from cows. Of the cow's four stomachs the first three can be used as tripe. The traditional British dishTripe and onions[?] and the French dishTripes � la mode de Caen (tripe Caen style) are well-known known tripe dishes.
