Steam is the gaseous phase of water. At standard atmospheric pressure, water boils and turns to steam at 100 ° Celsius. As a gas, steam occupies about sixteen hundred times the volume of water, and that expansion can be converted into a mechanical force and harnessed to provide useful energy in a steam engine.
