Sauerkraut

Sauerkraut is a fermented cabbage preserve of German origin.

How To Make Fresh cabbage is cut into fine strips, packed into a pot, salted and pounded until the brine covers the cabbage. The mixture is then covered with a wooden board and stones, to keep the cabbage submerged. The fermentation process takes 4 to 6 weeks.
