Garam masala

A blend of dry-roasted ground spices common in Indian cooking. There are many variants, but garam masala usually contains black pepper, cardamom, cinnamon, chiles, cumin, nutmeg, and fennel (but may contain other spices as well). It can be used during cooking or as an addition afterwards, sprinkled on top.
