Fusion cuisine

Fusion cuisine refers to food that combines elements of various culinary traditions whilst not fitting specifically into any. It is generally used to refer to the innovations in many contemporary restaurant cuisines since the 1970s.

Success of this type of restaurants depends on diversity of cultures in their clientele. For that reason, they are welcome in places like California.

A sample of the menu of an American-Euro-Japanese restaurant in California includes:

  • Sake cocktails
  • Salad with crisp nori topping and miso cilantro vinaigrette as dressing
  • Rock shrimp dumplings
  • Eel, Lettuce and Tomato sushi handroll
  • Poached tofu
etc.
