Beef jerky is essentially beef that's been cut into strips, marinated[?], and dried (originally in the sun). The result is a strip of rather salty beef that can be stored for long periods of time, similar to pemmican.
In more recent times beef jerky has evolved into a snack-food, typically in the shape of a long rod, and heavily spiced.
