Bacillus cereus

Bacillus cereus is a Gram- & catalase-positive, spore-forming facultative anaerobic rod-shaped bacteria.

Types: emetic and diarrheal type

Clinical: Painful diarrhea or vomiting, abdominal cramps.

Pathobiology: Bacteria comtaminate uncooked food (rice). During high temperature cooking, form protective spores later, when food rewarmed, spores germinate.

Prevention: good food handling of meats, rice and pasta.

Treatment: rehydration.
