Apple sauce

Apple sauce is a traditional accompaniment for roast pork[?]. It is made from stewed and mashed apples, sweetened to taste with sugar. It is easily produced at home, and commercial versions are readily available in the supermarket.

Unsweetened apple sauce is a good food for babies.

Pare and core tart apples, cut them in slices, rinse and put them in an earthern stewpan, set them on the fire, do not stir them until they burst and are done: mash them with a spoon, and when perfectly cool sweeten with white sugar to taste.
